Chicken Tortilla Soup
Chicken, Hatch green chilies, a little chipotle, and a rich, creamy broth. Served over melted cheese and finished with the toppings you like.
It’s a good bowl to make when everyone can add their own avocado, fresh cilantro, or crisp tortilla strips at the table.

Ingredients
- 1 tbsp olive oil or bacon fat
- ¼ cup finely chopped onion
- ¼ cup bell pepper, chopped (green, red, yellow, orange, or a combination)
- 2 cloves garlic, minced
- 1 cup chopped zucchini or yellow squash (or a combination)
- 4 oz canned Hatch green chilies
- 1 tsp chipotle powder
- 1 bay leaf
- 2 sprigs fresh oregano (or ½ tsp dried)
- 1 lb cooked chicken, chopped (breast, thighs, or a combination)
- 2 cups chicken bone broth
- ¼ cup cream cheese, softened
- 1 cup heavy cream
- ½ tsp salt and ½ tsp black pepper, plus more to taste
- 1 cup shredded Monterey Jack or Pepper Jack cheese
Optional Toppings (not included in nutrition)
- Fried zero-carb tortilla strips
- Diced avocado
- Fresh cilantro
- Crispy bacon pieces
- Sour cream
Instructions
- Heat the olive oil or bacon fat in a soup pot over medium heat. Add the onion, bell pepper, and garlic; cook until just tender.
- Add the zucchini or yellow squash, Hatch green chilies, chipotle powder, bay leaf, and oregano. Stir to combine.
- Stir in the cooked chicken. Add the chicken bone broth and scrape up any browned bits from the bottom of the pot. Cover and simmer over medium heat for 25–30 minutes.
- Remove from the heat and stir in the softened cream cheese until completely combined.
- Return the pot to low heat and stir in the heavy cream. Bring just to a gentle bubble, then remove from the heat. Season with the salt and pepper, adjusting to taste. Remove the bay leaf and oregano sprigs, if used.
- Divide the shredded cheese evenly among four soup bowls, placing it in the bottom of each bowl. Ladle the hot soup over the cheese.
- Serve with optional fried zero-carb tortilla strips, diced avocado, cilantro, crispy bacon, or sour cream. Optional toppings are not included in the estimated nutrition.
